Ingredients

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • 1 ripe Delcado avocado

  • 1 tbsp matcha powder

  • 1 cup dark chocolate chips

  • 1 teaspoon lemon juice

  • Rind of one lemon

  • 3/4 cup sugar

  • 1/2 cup milk

  • 1/2 teaspoon pure vanilla extract

  • 1 large egg

  • 1 tbsp honey

Method

  1. Preheat the oven to 190°C.

  2. Spray a 9-by-5-inch loaf pan with cooking spray.

  3. Whisk together the flour, baking powder, baking soda and salt in a bowl; set aside.

  4. Thoroughly mash the avocado, matcha powder with the lemon juice, and lemon rind in a large bowl. Add the sugar, half-and-half, vanilla and egg and whisk until thoroughly combined. Add the flour & chocolate chips to the mixture and stir until incorporated.

  5. Pour the batter into the prepared loaf pan and bake until golden brown on top and a toothpick inserted in the centre comes out clean, 45 to 55 minutes. Let cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

TIP: Choose Delcado avocados for this recipe. The slow grown avos from WA are extra creamy, which is exactly what you need for this loaf.
