Eggs Benny with delcado Hollandaise

Hollandaise Sauce Ingredients
- 1 medium ripe Delcado avocado 
- Juice of 1 large lemon (about 3 tablespoons) 
- Pinch cayenne pepper 
- 1/4 teaspoon kosher salt + more to taste 
- 1/8 teaspoon ground white pepper + more to taste 
- 1/4 – 1/2 cup hot water (from the tap is fine) 
Breakfast Ingredients
- 2 eggs 
- 2 tbsp white vinegar 
- 1 slice sourdough 
- 80g sliced ham or smoked salmon 
- 1 tbsp olive oil 
- 1 cup baby spinach 
Method
- Place all your sauce ingredients into a blender and puree until smooth, drizzling in additional water or lemon juice as needed to create a smooth sauce. 
- Taste and season with salt and pepper. 
- Toast your sourdough. 
- Bring a large pot of water to a boil, add your vinegar, then reduce the heat to low. 
- Gently crack your eggs in the water one at a time & cook for 3 minutes. 
- Remove the egg with a slotted spoon and dab it on a paper towel to remove any excess water. 
- Wilt your spinach in a pan on a medium heat with olive oil, salt and pepper. 
- Layer your toast with spinach, Ham & poached eggs then top with your luscious Delcado avocado hollandaise sauce and enjoy Hot. 
- Keep refrigerated in an airtight container for 2-3 days. 
TIP: Delcados are the ideal choice for this dish. Their smooth, buttery texture and nutty flavour makes for a perfectly creamy hollandaise sauce.
