Eggs Benny with delcado Hollandaise

Hollandaise Sauce Ingredients

  • 1 medium ripe Delcado avocado

  • Juice of 1 large lemon (about 3 tablespoons)

  • Pinch cayenne pepper

  • 1/4 teaspoon kosher salt + more to taste

  • 1/8 teaspoon ground white pepper + more to taste

  • 1/4 – 1/2 cup hot water (from the tap is fine)

Breakfast Ingredients

  • 2 eggs

  • 2 tbsp white vinegar

  • 1 slice sourdough

  • 80g sliced ham or smoked salmon

  • 1 tbsp olive oil

  • 1 cup baby spinach

Method

  1. Place all your sauce ingredients into a blender and puree until smooth, drizzling in additional water or lemon juice as needed to create a smooth sauce.

  2. Taste and season with salt and pepper.

  3. Toast your sourdough.

  4. Bring a large pot of water to a boil, add your vinegar, then reduce the heat to low.

  5. Gently crack your eggs in the water one at a time & cook for 3 minutes.

  6. Remove the egg with a slotted spoon and dab it on a paper towel to remove any excess water.

  7. Wilt your spinach in a pan on a medium heat with olive oil, salt and pepper.

  8. Layer your toast with spinach, Ham & poached eggs then top with your luscious Delcado avocado hollandaise sauce and enjoy Hot.

  9. Keep refrigerated in an airtight container for 2-3 days.


TIP
: Delcados are the ideal choice for this dish. Their smooth, buttery texture and nutty flavour makes for a perfectly creamy hollandaise sauce.
