PONZU DELCADO AND SOBA NOODLE SALAD WITH SESAME

Ingredients
Delcado Salad 
2 ripe Delcados, cut into wedges, lengthways
200g soba noodles 
2 cups green cabbage, finely sliced
1 cup red cabbage, finely sliced
2 tablespoons green onion, finely sliced
1/3 cup baby coriander leaves 
Black and white sesame seeds for sprinkling 
Fresh wasabi leaves to serve (optional) 
Ponzu Dressing
2 tablespoons sesame oil
2 tablespoons soy sauce
1 tablespoon rice wine vinegar 
1 teaspoon brown sugar 
1 teaspoon finely grated ginger 
4 tablespoons of ponzu or lime juice 
Method
Ponzu Dressing
- Whisk together sesame oil, soy, vinegar, sugar, ginger, and ponzu or lime juice in a bowl. Refrigerate until ready to use. 
Delcado Salad
- Cook the soba noodles in a large pot of salted boiling water for 3-4 minutes or until tender. Drain and rinse under cold water. 
- Place noodles, cabbage, onion and coriander in a bowl. Drizzle with ponzu dressing and gently toss to combine. 
- Divide between two serving bowls and top with Delcado wedges. Sprinkle with sesame seeds to serve.
