DELCADO, KOHLRABI, APPLE AND CABBAGE SLAW WITH CREAMY DELCADO DRESSING

Ingredients

Delcado Slaw
2 ripe Delcados, sliced 
1 kohlrabi, julienned 
1 green apple, thinly sliced 
1 tablespoon finely chopped coriander 
2 cups finely sliced red cabbage 
1/4 cup Thai basil leaves 
1/4 cup mint leaves 
Black sesame for sprinkling 
Baby red vein sorrel to serve
Baby coriander to serve 
Fresh lime to serve 

Delcado Dressing 
1 ripe Delcado, chopped 
1 tablespoon olive oil 
2 tablespoons lemon juice 
1 teaspoon Dijon mustard
2 teaspoons honey 
1 teaspoon finely grated ginger 


Method

Delcado Dressing 

  1. Combine Delcado, olive oil, lemon juice, mustard, honey and ginger in a small food processor bowl until smooth and creamy. Refrigerate until ready to use.

Delcado Slaw

  1. Place the kohlrabi, apple, coriander, cabbage, basil and mint in a bowl and toss to combine.

  2. Add a generous amount of the Delcado dressing to each serving plate and smooth out with the back of the spoon. Top with prepared slaw, sliced Delcados, black sesame, red vein sorrel and baby coriander. Serve with extra dressing and lime.
